Breaking a HUGE Plateau!

So no joke, I had been the same weight for like 6 months despite working out and eating well…. You know what that means…  PLATEAU! That’s kind of a dirty word in the fitness world! But I stayed the course, and really committed to working out, drinking Shakeology, and eating well and this past week I saw HUGE changes! 3.5 pounds down, baby! This really takes me down into my target range and I am so ecstatic! As my friends, I just had to share this with you because I feel so great about myself and I want you to feel that way too! So here’s a little preview of the workout I’ve been doing- gotta share what works with you guys! 🙂

Healthy Thanksgiving: Mac & Cheese

healthy mac and cheese Is mac & cheese a Thanksgiving staple for you?  It’s one of my all-time favorite foods, but, let’s face it, not the healthiest food choice.  Since it’s Thanksgiving after all, delicious mac & cheese should be on the table!  So how do we do it without eating 700 calories per serving??  Try this recipe with 367 calories per serving: Main Ingredients 2 tablespoons olive oil 2 tablespoons flour 1 ½ cups non-fat milk ½ cup Parmesan cheese ¾ pound macaroni noodles ½ cup cheddar cheese ¼ cup breadcrumbs Just make it how you would make your usual macaroni and cheese, but use the above ingredients.  Want some extra nutrients?  Add spinach or butternut squash!  Both are super delicious in the mac and cheese!  I also love whole wheat pasta in it.  I’m getting hungry just thinking about it!

Healthy Thanksgiving: Mashed Potatoes

With Thanksgiving less than a week away, I want to try to give healthier options to our favorite Thanksgiving day foods.  I promise that these options will give you the flavor and taste you want without the excess fat and calories.

Today’s food is mashed potatoes!  Now, this is my personal favorite at Thanksgiving.  I always make sure we have them.  But if you use whole milk and real butter, you’re going to end up with so many calories and a ton of unwanted fat!  Try this recipe for a healthier and DELICIOUS alternative:

Ingredients:
3 pounds russet potatoes (any potato works), peeled and cubed
6 garlic cloves, separated and peeled
1/2 cup fat-free milk 1 tablespoon trans fat-free margarine
Ground black pepper, to taste
2 tablespoons chopped fresh parsley

Directions:
In a large stockpot, cover the potatoes with water. Bring to a boil. Reduce heat and simmer until tender, about 15 minutes. Drain the potatoes thoroughly and return to the stockpot.

In a small saucepan, cover the garlic with water. Bring to a boil. Reduce heat and simmer until tender, about 10 minutes. Drain the garlic.

In a food processor or blender, combine the garlic and milk. Puree until smooth. Add the pureed garlic and the margarine to the potatoes. Mash to desired consistency. Season with black pepper to taste. Garnish with parsley and serve immediately.

These tasty potatoes only have 157 calories per serving and are low in sodium!  Plus, they taste great!

Another mashed potato trick is using cauliflower instead.  Now, I know what you’re thinking, “I don’t like cauliflower so this won’t work for me.”  Wrong!  I promise that you won’t even be able to taste that it’s cauliflower.  All you do is cook the cauliflower and use it in place of the potatoes in the recipe above.  It’s so good AND you’re getting your veggies in.

Get Back in the Habit

So you were just on vacation or you just got over a sickness.  Either way, you haven’t worked out in at least a week.  Yep- been there!  It’s always hardest to get back into exercise is after you’ve spent a significant amount of time away from it.  The best way to get back on track?  Just dive back in!  Yes, yes, easier said than done!  But it’s true!

It takes 21 days to create a habit.  That’s just 3 weeks.  If you can commit to working for just 21 days, it will become a habit- a good one!  You’ll start to WANT to work out.  You’ll also crave those healthy endorphins that exercise creates.  You’ll have less energy when you DON’T work out and more when you do.  You’ll feel better when you’ve worked out and lazy when you don’t.  Plus, let’s face it, after 21 days you’re going to look pretty darn good!

So just give yourself 21 days…
