This is one of my FAVORITE recipes and you can make it SO many different wants including just substituting cauliflower in for your usual potato recipe! Give this one a try and see what you think!

Ingredients:

  • 1 Large Head of Cauliflower
  • 1 Oz Chicken Broth, Low Sodium
  • 2 Cloves Garlic, Finely Minced
  • 2 Tbsp Parmesan Cheese, Low Sodium
Directions:
  1. Place the Cauliflower in a steamer and steam to desired tenderness. Alternatively, if you don’t have a steamer, put about an inch of water in the bottom of a pot and put cauliflower in the. Cover and steam to desired tenderness. You want it to be pretty soft because you’re going to mash it!
  2. In a bowl, mash the Cauliflower with Garlic, Chicken Broth and Parmesan Cheese. You have some play here so use your taste buds- just be careful because it may change the calorie count and the sodium!
  3. Make sure to serve this warm and you may even fool some people into thinking it’s really potatoes! 😉
