I was the one who hated working out. Running the mile….. just shoot me- please! Get up early to workout?  ::groooooan::  Working out on the weekends? “Nah, I’m too busy.” or even “I’m not feeling too well…..” So I get it, I really, really do.  It was when it came to necessity for me that I started working out consistently. I mean, it was either that or spend a good chunk of my life in bed…. in pain.

21 Days… That’s how long it took for it to become a habit and something that I could NOT live without. Not only did it help me with my pain, but it was a great way to burn off steam. I was mentally and physically stronger when I was working out consistently and that is now something that I wouldn’t trade for anything.

So I share this with you in hopes that you won’t wait until it’s a necessity for you. Start today and get into a habit of working out. You’re going to feel better, be stronger, treat people more kindly, and think more clearly. If this workout hater, someone who truly dreaded it, can turn it into a HUGE positive in my life, you definitely can!

It's Seriously Time For a Change!

Wow, guys. I just read that the CDC posted new stats about diabetes and obesity in October and what I read was absolutely shocking. They estimate that by 2050, if health trends continue as they are now, the number of people with diabetes will double and most likely TRIPLE. So chew on this… currently, diabetes makes up $174 billion each year in health care costs. Triple that.

What does this have to do with weight? Well, while there are a lot of causes of diabetes, the most direct cause is being overweight. In fact over 85% of people with type 2 diabetes are overweight.

The obesity trend is one that is so extremely frustrating. There are so many BAD options out there with fast food on every corner and portion sizes growing at rapid speeds. There are so many processed foods all around us and as a whole, the US eats at restaurants more and cooks less than it used to. We’re seriously choosing a bag of chips over a piece of fruit because they have the same 100 calories. Where are the nutrients????  So no wonder this is a growing problem.

It’s seriously time for a change! That’s why I’m proud to stand up and say that I am helping to end the trend of obesity one person at a time! It’s time for all of us to stand up for healthy foods and say no to processed junk! Light Espresso Cheesecake

Okay, people so we ARE talking about cheesecake here which isn’t exactly the epitome of health, BUT there are a few ways to enjoy without TOTALLY over-doing! This recipe is super delish! I hope you all enjoy!

Preheat Oven to 325. Use either a 9-inch cheesecake pan ungreased OR a springform pan with 3-inch sides greased.

A tip when making cheesecake is to leave all the ingredients out of the fridge until they are at room temperature before mixing them together. It stops that cracking in the top of the cheesecake!

Crust:

1.5 Chocolate Sandwich Cookie Crumbs- you can use the 100 Calorie Pack Oreos, they work really well!

3 Tbsp reduced fat butter, melted, or Margarine if you prefer

Filling:

2 Packets (8 oz each) Neufchatel or Light Cream Cheese, Softened

3/4 Cup Granulated Sugar- OR the equivalent of Splenda or Truvia

2 Eggs

2 Tbsp All-Purpose Flour

1 Tbsp Instant Espresso Powder

1 Tbsp Hot Water

1 Tsp Vanilla

Decoration:

Optional- I think it tastes great with OR without.

1/4 Cup Instant Espresso Powder

2 Tsp Hot Water

8 oz. Lower-Fat Whipped Topping

Instructions:

1. CRUST: In a medium bowl, combine cookie crumbs and butter/margarine. Press into bottom of cheesecake pan and freeze.

2. FILLING: In a large mixer bowl, beat cream cheese and sugar on medium-high speed for 3 minutes. Add eggs, one at a time, beating after each addition. Mix in flour. In a small bowl, dissolve espresso powder in hot water. Mix dissolved espresso and vanilla into batter. Pour batter over frozen crust. Bake in preheated oven for 35 to 45 minutes or until the top is light brown and the center has a slight jiggle to it. Cool on a rack for 2 hours. Cover with plastic wrap and refrigerate for at least 6 hours before decorating or serving.

3. DECORATION: In a medium bowl, dissolve espresso powder in hot water. Beat espresso mixture into whipped topping. Spread evenly over cake.

Advanced HIIT Month

Okay, so I didn’t JUST start TurboFire, but this week I started the Advanced HIIT Month combo-ed with ChaLEAN Extreme Burn month! I am SO sore today! Between picking up SUPER heavy weights and all that plyometrics- whew! I mean, seriously, extending my arms is painful- haha! But all that to say that I know this is working! The HIIT workouts are making my longer cardio workouts FLY by and I’m hungry all the time which means my metabolism is revved to the max because of the heavy weights.   I also have some very nice guns to show for my weight lifting (oh you know a pic is coming soon!)! Do you have a ticket to the gun show?

Okay, I know that was totally corny but I’ve always wanted to have a reason and to be able to say that!
