I’m down another 0.1 pounds today… that brings my total weight loss to 6 pounds! That is a TON of weight for me and I am still kind of shocked. I woke up at 7 am today, on a Sunday no less, totally ready to get up and start the day! For someone who tends to sleep in quite a bit on the weekends- this is a really big thing for me! That’s even AFTER I did all that cleaning and cooking yesterday so it’s really quite a change. I know that a lot of it is because I’m sleeping so much more soundly and who couldn’t use that, right?
Delicious, delicious fruit again for breakfast. Same blend and variety as yesterday since we chopped up so much fruit in advance.

Lunch today is the Hearty Vegetable Miso Soup from dinner last night and microgreen salad. I’m sooooo glad I went ahead and made extra soup last night and also happy that I made salad for these next three days. I don’t have to stop and prepare lunch. If you’re like me, it’s hard enough to stop and prepare dinner so I’m all about making this easier! I am still really diggin’ this soup- I think this will be something we eat after this is all said and done for sure! And because it’s so delicious- it warranted another picture for sure! YUM!
I needed a snack today! There are a lot of options when you log into the Participant Portal and imagine my surprise and delight when I saw that peanut butter was on the list! OH heck yeah I had 1.5 Tbsp of that delicious stuff! Really helped me get through the afternoon. Most days are really good, but you know, some days you just need a little extra to get through.

Okay, so….. you’re probably wondering what the heck this even is, right? Well, feel free to laugh at me because I totally overcooked our beets tonight! BUT IT WAS OKAY!! Some pieces were nice and juicy and others were like a beet chip! It actually turned out really well! My suggestion though is make sure you cut the beets are uniformly as possible and really keep an eye on them. Anyway, this was Mediterranean Roast Beets and this is definitely an AWESOME recipe! I honestly haven’t eaten many beets so I didn’t know what to expect- the last time we made them on the Reset, it was accompanied by yams and carrots so I was concerned about just beets, but MAN these were good! A cup of quinoa is optional but I wanted it and it was delicious with the beets. Alongside was Coconut Collard Greens and these were also awesome!! You use coconut milk to cook these and Mmmm! We were saying that when this is over these greens would be AWESOME folded into an omelet! Just a head’s up Mediterranean Roast Beets are part of your lunch tomorrow so you may as well double up tonight and stick them in the fridge for tomorrow- you can even eat these warm or cold!
I cannot BELIEVE we’re already at Day 13 tomorrow! We have fewer days left than we’ve already been through which is a great feeling! It means the finish line to a challenge is just down the road and I am so proud of us!
Happy Saturday and Happy Day 11 on the Ultimate Reset! I’m down 1.3 pounds which makes up for yesterday’s gain. So remember last Saturday when I said I kind of slept in a LOT? Well, today was much less so! I did sleep a little longer than normal but definitely not like last weekend. I see this as a great sign! My body is not in such a state of shock from it all. I’m feeling really good today! I had a lot that I want to get done today and I read that when you start detoxing your body, you sometimes want to detox your life too. Today I really wanted to clean so I guess that’s true.




Breakfast was not my idea of a usual breakfast…. Miso soup, sliced avocado (though I severely butchered mine as you can see), and chickpeas smashed up with olive oil. The chickpeas needed a little “help” in my opinion- I added just a pinch of Himalayan Salt and a little garlic too. That made it pretty darn delicious if I do say so myself. I’m definitely not used to eating, what I consider to be, non-breakfasty foods for breakfast so this was definitely different. I thought I’d be completely grossed out, but it actually was okay! This meal was something else made ahead of time- last night we threw down and made the miso soup and mashed the chickpeas. I’m telling you, this detox is ALL about planning ahead!

Breakfast this morning was a whole big bowl of fruit! In my bowl today was green apple, watermelon, raspberries, blackberries, strawberries, jicama and kiwi! So good! When you are preparing for this week- get a lot of fruit ready because you eat it almost every morning! We decided to just make kind of a fruit salad of it all and cut a bunch of fruit up so it would be easy to grab and eat in the morning.
