Eating Well When It’s Time To Go To the Grocery Store

Let’s face it, we’ve all been there. It’s time to go to the grocery store, but life gets in the way and we’re so busy so that is just one task that doesn’t get done today. But what do we eat for dinner then?? Recently, I discovered that I have a rare talent- yes I can look into the cabinets/fridge and put something together that is super tasty even when I’m desperate to go to the store.

The key to this is getting creative. Sometimes it takes putting some different ingredients together that you’ve never put together before. It’s important to keep it healthy though too. Part of what works with this is making sure you stock your cabinets and fridge with healthy things. These creative meals are going to be made with healthy but maybe not main ingredients, you got me?

Today, I opened my fridge and I had eaten through all my leftovers from cooking this weekend and it looked like I was out of most everything. There were a few key ingredients left in the fridge though….. eggs and leftover brown rice. Hmm…. I also had a smidge of fat-free feta cheese left and I remembered a can of no salt added canned tomatoes. I know what you’re thinking… These sound like strange ingredients to combine, but… I was hungry and I had to try!

I whipped up some egg whites, added the brown rice, tomatoes and feta to the pan and sprinkled with garlic. After the eggs were completely cooked, I poured the whole concoction into a bowl. It smelled delicious! I wasn’t sure how it would turn out but these are some of my favorite ingredients so it couldn’t be THAT bad!

IT WAS DELICIOUS! In fact, I am looking forward to eating it again!

Another time I was running out of food and I wanted to make my Greenberry Shakeology. I really LOVE my Greenberry with fruit or fruit juice and I had  neither. I was also out of another standby of mine- sugar free/fat free cheesecake pudding mix. In fact, I was out of all pudding mixes period! I had about a Tbsp of PB2 though which is always a good choice. I also had pure maple syrup. Again, these sound like super strange ingredients, right? I mean I knew it would either be really good or really awful, but it was time to eat! I used that Tbsp of PB2 and about a tsp of maple syrup- I blended that with ice, water and a scoop of Greenberry and voila! Another strange combination!

AGAIN, it was soooo good! It’s turned into one of my favorite Shakeology recipes!

So this post is meant to encourage you to get a little creative with your eating. Make sure your kitchen is stocked with healthy foods so that when you run out of time for a grocery run, you still have something delicious and healthy to eat. If you stock your kitchen with junk, you’re going to end up eating junk but stock it with healthy foods and it may save you from junk foods and even a trip to get fast food for a quick dinner!  No excuses for eating healthy!
