Broccoli Cheese Eggs Heather Coy Fitness

 

I pretty much eat breakfast any time of day- it’s probably my favorite meal! This is such an easy way to get a great meal that tastes DELISH and is totally 21 Day Fix approved! If you still have yellow containers left, feel free to add a piece of whole grain toast to this! Super yum and filling!

Ingredients

  • Coconut Oil Cooking Spray
  • 2 Eggs (Red Container)
  • About 1 Cup of Broccoli (Green Container)
  • 1 Tbsp Low Fat Shredded Cheddar Cheese (1/2 Blue Container)
  • Garlic Powder

Preparation

  1. Spray non-stick pan with coconut oil cooking spray and heat over medium heat.
  2. Steam broccoli*
  3. Crack both eggs into a small bowl and add garlic powder.
  4. Whip up the eggs until combined.
  5. Pour eggs into prepared pan and cook, stirring constantly.
  6. Add broccoli after eggs are coming together.
  7. When eggs are almost cooked completely, add cheese and combine.
  8. Pour eggs onto the plate and serve immediately.

*An easy way to steam broccoli is to fill a mug with a small amount of water- just to coat the bottom of the mug- and add the broccoli. Then microwave the broccoli in the mug until it’s cooked how you desire.

Make Your Own Sugar Scrub!

To be honest, I never thought of doing this myself until my sister gave us all sugar scrubs for Christmas. I totally loved it- what a great gift! But then I ran out… So I kind of started experimenting in making my own. Would it have been easier to ask… well, yes, BUT it’s fun to experiment, right? RIGHT! This is SO simple and you guys will LOVE making this at home. You may even have all the ingredients in your pantry right now!

Ingredients

  • 1 Part Coconut Oil (the amount in my pic is 1 Tbsp)
  • 3 Parts Sugar (the amount in my pic is 3 Tbsp)
  • Essential Oils (optional)

Preparation

  • Put coconut oil in a microwave proof container- I use ramekins in these pictures, it just depends on how much you’re making.
  • Microwave the oil in 15 second increments until it’s completed melted. If it’s warm where you are, it might already be melted- ha!

  •  Add the sugar to your coconut oil. Is it just me or does coconut oil smell really good with sugar added?

  • Mix sugar and coconut oil together until completely mixed. It will look something like this:

  • At this point, you can add essential oils if you like. Some of my favorite add-ins are peppermint with rosemary (such an amazing smell combo), lavender, and eucalyptus. You can also use food coloring to make it look pretty, but I’m kind of a purist myself so the natural color works for me!
  • Baby food jars work really well to bottle these up and you can definitely jazz up the jar to make it look super cute and BOOM- that gift for the hard to shop for is done!

     What I love most about this sugar scrub is that it’s SO moisturizing! You’ve heard of coconut oil being the miracle oil and here’s another great use for it! You’ll exfoliate with the sugar and the oil will leave your skin so silky smooth and soft!

Remember those delicious chicken and bell pepper skewers I grilled up on Memorial Day?

Well, there was so much leftover that I’m able to make other meals from it like this yummy chicken stir-fry! 11330030_944565072230388_9188234844359422969_n[1]

I used a little sesame oil, garlic, and cumin, then added some edamame, brown rice, warmed up the chicken and peppers, and finished it with a bit of liquid aminos! Yum!!!
